Fried Rice!

Pretty much one of the cheapest recipes, but it's really yummy anyway!

Ingredients :

1 large or 2 medium eggs, preferably free-range
2 tbsp sunflower or vegetable oil
2-3 spring onions trimmed and finely sliced or 1 small onion peeled and finely chopped
About a mugful of cold, cooked basmatti rice.
1/2 a mug (about 50g) of frozen peas, cooked or thawed
About 1 tbsp light soy sauce

Method:

Break the eggs into a bowl and beat them lightly. Heat a wok or large frying pan over a moderate heat and pour in the oil. Tip in the onions and stir fry for 2-3 minutes until beginning to soften. Add the eggs and stir until almost all the liquid egg has disappeared (a few seconds). Add the rice and peas and stir fry for a couple of minutes until hot through. Sprinkle over soy sauce to taste.

Enjoy!

Breakfast Pizza!

A very tasty breakfast pizza recipe!

Ingredients :

2 2/3ozMozzarella Cheese, grated
2 Eggs
1/2cupMilk and/or cream
Salt and Pepper, to taste
1/2Onion, chopped
1/2Onion, from above, ringed
1/2Green pepper, ringed
1Pizza crust

Method:

Prepare your favorite pizza crust and get ready to bake, as a regular pizza.
Make sure that you have a fairly high ridge, as the there is a lot of mixture, and it is fairly watery.
Pugliese bread dough works very well for a crust..
Add cheese, onion and salt and pepper.
Lightly brush olive oil over the pizza base.
Pour mixture over the crust.
Place rings of green pepper over the top.
You can also include onion rings, mushrooms, or other favorite Pizza toppings.
Color contrast helps here, as the mixture is rather plain looking.
Bake at 450 degrees for about 15-20 mins, or when crust is brown and egg mixture is set.

Yum!

  • 1 pound bulk hot Italian sausage
  • 1/2 pound whole pepperoni stick, cubed
  • 2 cups chopped onion
  • 2 large cloves garlic, minced
  • 3 tablespoons chili powder
  • 1 1/2 tablespoons dried Italian seasoning
  • 1 teaspoon granulated sugar

  • 1 3.8 ounce can sliced ripe olives, drained
  • Grated Parmesan cheese

Heat olive oil in Dutch oven or large pot over medium-high heat. Crumble Italian sausage into pot and cook until browned, breaking up meat. Stir in the pepperoni, onion, and garlic and cook for 5 minutes stirring frequently. Stir in chili powder, Italian seasoning, sugar, and red pepper flakes. Add tomato sauce, diced tomatoes, and chicken broth. Bring to a simmer, reduce heat slightly and cook uncovered for 25 minutes, stirring occasionally. Stir in beans and olives and heat until hot.
