La quinta Sunshine!

Hi!

I got this amazing recipe while i was staying at the Hotel La quinta inn in miami!

Thanks to the amazing cook who was so nice to share this recipe with me!

La quinta Sunshine:

Ingredients:

1/2 cup shortening 125 mL

1 1/4 cups granulated sugar 300 mL

2 eggs, separated

1 1/2 cups grated carrot 375 mL

1 tsp grated orange rind 5 mL

1 3./4 cups all purpose flour 425 mL

3 tsp baking power 15 mL

1/2 tsp salt 2 mL

1/3 cup milk 75 mL

Method:

Cream shortening, add sugar gradually and cream until light and fluffy.
Add egg yolks and beat well, then stir in grated carrot and orange rind.
Sift flour, baking powder and salt together and add alternately with milk to first mixture.
Beat egg whites until stiff, but not dry, and carefully fold into batter.
Line the bottom of a square cake pan with waxed paper, or grease a tube pan; pour in pudding and bake for 1 hour at 350F (180C).

Amazing!

Thanks alot to the cook(s) at the Hotel La Quinta Inn in Miami! ( www.lq.com )
