Irish Stew

A very nice recipe for Irish Stew, if you never had this try it out !

Ingredients

1/2 bag of potatoes
3 medium / 2 large carrots
1 onion
0.8 kg of mince (preferably beef)
2 beef stock cubes and / or beef gravy powder (very important that you do not use granules)
1-2 medium sized bags of instant mash

Method

Peel and chop potatoes (not too small or else they well disintegrate), peel and slice carrots, chop onion finely, and place all ingredients in saucepan (I normally use an 8 litre pan but any large saucepan will do - or split between 2 average sized pans).
Fry mince (in its own juices) and drain off fat.
Place mince on top of vegetables in saucepan, and cover all ingredients with hot water. Put pan on a medium-high heat.
Once water begins to boil crumble and add stock cubes and gravy powder - as to taste (if you use granules they tend to clog in this recipe). Stir ingredients well and reduce heat so ingredients are simmering.
Let stew simmer for approximately 1 hour checking occasionally to make sure ingredients are just covered with water.

After 1 hour, turn off heat and add instant mash to thicken - do this slowly and stir continuously.

Serves 4!

Yum!

Pretty much one of the cheapest recipes, but it's really yummy anyway!

    Ingredients :

1 large or 2 medium eggs, preferably free-range
2 tbsp sunflower or vegetable oil
2-3 spring onions trimmed and finely sliced or 1 small onion peeled and finely chopped

    Breakfast Pizza!

A very tasty breakfast pizza recipe!

    Ingredients :

    2 2/3ozMozzarella Cheese, grated
    2 Eggs
    1/2cupMilk and/or cream
    Salt and Pepper, to taste
    1/2Onion, chopped
    1/2Onion, from above, ringed
    1/2Green pepper, ringed
    1Pizza crust

    Method:

Prepare your favorite pizza crust and get ready to bake, as a regular pizza.
Make sure that you have a fairly high ridge, as the there is a lot of mixture, and it is fairly watery.
Pugliese bread dough works very well for a crust..
Add cheese, onion and salt and pepper.
Lightly brush olive oil over the pizza base.
    Pour mixture over the crust.
Place rings of green pepper over the top.
You can also include onion rings, mushrooms, or other favorite Pizza toppings.
Color contrast helps here, as the mixture is rather plain looking.
Bake at 450 degrees for about 15-20 mins, or when crust is brown and egg mixture is set.

    Yum!

    Yummy Lemon Pie!

A very, very, very simple and cheap recipe for a really delicious Lemon Pie.

    Lemon Pie

2 Uncooked 9-inch pie shells (freshly made or frozen)

    2 Lemons, large

    2 cups Granulated sugar

    4 Eggs

Slice the whole lemons (peel and all) into paper thin slices (a mandolin slicer works well). Remove any seeds you may see. Toss the slices with the sugar. Allow to rest 3 to 4 hours, stirring frequently. Beat the eggs and add them to the lemon mix. Place the mixture in one of the pie crusts (inside a pie pan). Invert the second crust over the pie to form the top crust. Seal the edges and trim off any excess. Place a small slit in the top crust. Place in a pre-heated 425 oven for 15 minutes. Reduce the temperature to 350 and cook for 20 minutes longer or until the pie is lightly browned.

    Easy and tasty Bread!

    Basic Bread

This is a very easy and delicious recipe i love to use!

    Ingredients :

4 cups flour, white or whole wheat

    pinch sea salt

2 tablespoons unsalted butter or olive oil (for Italian loaf)

    2 tablespoons sugar or honey

    1 2/3 cup warm water

    1 tablespoon yeast

Stir sugar/honey into warm water until dissolved. Add yeast, stir with wooden spoon and leave to sit for 5-15 minutes or until frothy.

Sift flour and salt into bowl. Make a well in the center, add your butter. Pour in yeast mixture. Mix together with your hands until you get a rough dough. There will be some flour/pieces of dough that refuse to stick together, that's okay, they'll easily be worked in. Place your dough on a lightly floured work surface and knead for about 10 minutes or until smooth and consistent. Return to a cleaned, oiled bowl (use olive oil) and cover with a damp tea towel until your dough has roughly doubled in size. Depending on the temperature of your kitchen, this can take anywhere from 50 minutes to 2 hours.

Return your dough to a floured work surface and knead it again for 3-5 minutes. Form a loaf, seam side down, and cut five diagonal slashes across the loaf. Brush with soft butter or olive oil, cover with damp tea towel and leave it to rise until doubled in size. If you want to brush your loaf with milk or egg white, do this just before you put it in the oven. You can add oregano, slivers of garlic or rosemary to the top of the loaf just before you put it in the oven.
Bake in a 375-400 degree oven for 15-20 minutes, or until golden brown and hollow-sounding when tapped from the bottom.
If you want to make 2 loaves, simply cut the dough in half before you knead it for a second time, cover the surface in olive oil, wrap in plastic wrap and put it in the fridge. The dough will keep for 2 days. When you want to use it, unwrap, let it come to room temperature, knead it and form it into a loaf.

    Yum!
